jacked-up banana bread | smitten kitchen

For Family Week last week, I had bought a few bananas since I thought my in-laws might like them with oatmeal. The problem was, they didn’t ripen in time. By the time they were ripe, it was Saturday, and I don’t make much of a habit of eating bananas, so I casually mentioned banana bread.

Tom’s eyes grew wide and he said, “DO IT.” And since he was willing to be the one to run to the store for the baking soda I needed… I did. I used this recipe.

You guys, it was so good. That tablespoon of bourbon that’s labeled “optional?” Just that little bit gave the loaf a really delicious bourbon-y smell after it had been wrapped up in foil in the fridge for a couple of days. Which is when, I am convinced, it’s at its best.

Today I purposely bought some slightly past-their-prime bananas while everyone else at the supermarket was trying to get the ones that were still slightly green. Because I am making this again this weekend. And I might use even a little more bourbon.
