I’ve said this to a couple of people today, and it seems to be becoming enough of a theme that I will share it with all of you.

The best thing we ever did for our holiday cooking adventures was buy an electric roaster oven. Seriously. That’s where the turkey goes (or the prime rib at Christmas), and the contraption sits on a small (but sturdy) table, out of the way, near an outlet, and it frees up the oven for sides, pies, etc. Your food will cook exactly like it would in a regular oven. And like a crock pot, it’s safe to leave unattended if you have to run out to the grocery store or to Christmas Eve church or something. 

We only use it a couple of times a year, but if you’re planning to cook a major roasting-oriented dinner even that often, or any meal where you need things to cook simultaneously at substantially different temperatures, it’s worth finding a place to stash it.
